Ciasto marchewkowe okazało się hitem tegorocznych świąt. Marchewka w trakcie pieczenia mięknie, dzięki czemu ciasto jest mokre i puszyste. Skusiłam się na nie przede wszystkim dlatego, że uwielbiam przyprawy korzenne, które są jego niezbędnym składnikiem. Z lekkim kremem na bazie serka mascarpone i kruszonymi orzechami włoskimi smakuje genialnie :)
Przepis:
Składniki na ciasto:
- 4 jajka
- 2 szklanki mąki
- 3/4 szklanki cukru
- 3/4 szklanki oleju kokosowego
- opakowanie przyprawy piernikowej
- 2 szklanki tartej marchewki (5 sztuk)
- 1/2 łyżeczki sody oczyszczonej
- 1 łyżeczka proszku do pieczenia
Jajka utrzyj z cukrem używając miksera. Cały czas mieszając powoli dodaj olej i pozostałe składniki. Dokładnie wymieszaną masę wylej na blachę wyłożoną papierem do pieczenia. Piekarnik rozgrzej do 180 stopni i piecz ciasto około 40 minut.
Składniki na masę:
- 1 mała śmietana 30%
- 1 opakowanie serka mascarpone
- 2 łyżeczki cukru pudru
- garść orzechów włoskich
Dobrze schłodzoną śmietaną ubij na sztywno. Cały czas miksując powoli dodawaj serek mascarpone oraz cukier. Masą posmaruj upieczone i nasączone mocną herbatą ciasto. Orzechy włoskie rozgnieć za pomocą noża (odwracając ostrze płaską stroną w kierunku orzechów), a następnie posyp nimi ciasto. Całość przechowuj w lodówce.
